The evening starts with a welcome inspired by a Mexican kermes, a neighborhood-style fair featuring typical games along with esquites and fresh aguas frescas to ease guests into the mood before boarding. From there, travelers climb aboard one of 32 trajineras, each boat decorated to represent a different state of the Mexican Republic, and the flotilla sets off along canals designed to evoke the look and feel of Xochimilco. As the boats move through the water, live music groups rotate through the evening, including mariachi, norteño, ranchero, jarana, and marimba ensembles, keeping the soundtrack constantly changing.

Food and drink flow throughout the night alongside the music. Guests are served a tasting of different flavors from Mexican cuisine, and the open bar keeps glasses filled with tequila, beer, rum, vodka, fresh water, and soft drinks for the length of the outing. A host stays with the group to keep the energy up, encouraging singing and dancing rather than treating them as optional extras. On Tuesdays and Fridays, the format shifts to Xoximilco Retro, layering in a nineties party atmosphere on top of the regular festivities.
